Vegetable Pulav
Sona masoori or Basmati rice - 1 cup (I used sona masoori)
Coconut milk - 1/2 cup
Cumin seeds - 1 tsp
Onion - 1 medium
Cloves - 2
Cinnamon - 1 inch
Curd - 1 tblspn
Green chillies - 2 slited
Ginger-garlic paste - 1 tsp
Coriander powder - 2 tsp
Mixed veggies - 1 cup ( I used frozen mixed veggies)
Coriander leaves for garnishing
Extra virgin olive oil - 6 tsp
Salt to taste
Method:
Boil mixed veggies in microwave for 1 min and keep aside.
Heat oil in a pan and add cumin seeds when they start to splutter add cloves, cinnamon, green chillies, onion and fry till onion turns pinkish color. Then add ginger-garlic paste and fry till raw smell goes off.
Now add mixed veggies,curd, Coriander powder,salt and fry for 5 min.
Add required amount of water and coconut milk and allow it to boil . Adjust salt if required.
Then add rice and mix well. close and cook till done.
Garnish with coriander leaves.
Channa Masala
Ingredients:
Garbanzo beans(channa) - 1 tin
Onion - 1 medium
Tomato - 2 big
Cinnamon - 1 inch
Cloves - 2
Cumin seeds - 1 tsp
Turmeric powder - 1/2 tsp
Chilly powder - 4 tsp
Garam masala - 1 tsp
Tamarind paste - 1/2 tsp
Salt to taste
Chopped coriander leaves for garnishing
Method:
Rinse channa well and wash under tap water for 10 times.
Boil water, add tomatoes and boil it and remove skin and grind it into smooth paste.
Heat oil and lightly roast onion for few min. let it cool. Then grind onion into smooth paste.
Heat oil in a pan add cumin seeds when they start to splutter add onion paste and cook till oil seperates. Then add tomato puree and cook for sometime.
Now add channa, chilli powder,salt, garam masala, tamarind paste and cook till its done.
Garnish with coriander leaves.
Serve with rice, roti, poori....
