Last whole week was a bit busy. Here is my favorite okra pulikulambhu without tomato.
Try it out and let me know about your comments. I want to make very simple and healthy dishes.
Okra - 10-12
Onion - 1 medium (or) Small onion - 6-7
Tamarind paste - 1 tblspn
Chilli powder - 2 tsp
Coriander powder - 3 tsp
Turmeric powder - 1/2 tsp
Fenugreek seeds - 3-4
Curry leaves - 2-3
Salt to taste
Oil - extra virgin olive oil
Method:
Cut okra into big pieces and keep aside.
Cut small onion into two halves or chop the medium onion very finely.
Add little oil and fry okra till it become soft remove from heat and keep aside.
In the same pan add little oil add onion and fry the onions till golden brown.
Now add fenugreek seeds and fry for 1 min.
Get thick tamarind by adding less amount of water to tamarind.
To this add salt, chilli powder, coriander powder and mix well.
Allow it to boil well and cook till you get thick gravy. Then add chopped curry leaves.
Serve hot with rice.
