FRIED TOFU IN SPINACH LEAVES



Spinach leaves is rich in iron, potassium and vitamin C and E. The potassium helps prevent and regulate high blood pressure. Spinach leaves can be eaten raw in salads. It can be used to make soup , dip, sandwich, curries and many things..... Mainly it is very easy to cook in very less time.
The green color provide more nutrients than any  other food. Although spinach is available throughout the year in all places. The Vitamin A and C in spinach plus the fiber, folic acid, magnesium, and other nutrients help control cancer,  lung and breast cancers.As u can see, the health benefits of spinach are numerous.

Ingredients:
Spinach Leaves - 1 bunch or half small packet
Tofu - 10-15 cubes 
Onion - 1 small 
Tomato puree  - 1 cup 
Green chillies - 1 or 2 ( as u like it)
Garlic - 3 -4 pods
Turmeric powder - 1/2 tsp 
Ginger garlic paste - 1 1/2 tsp
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp 
Garam masala - 1/2 tsp
Cumin seeds - 1 tsp
Salt to taste 

Method:
Roughly chop  garlic and green chillies.
Heat oil in a pan add garlic, green chillies fry till nice aroma comes out of garlic. Then add spinach leaves and stir fry it till the amount of spinach reduced. Keep it aside let it cool. Grind the spinach leaves in blender or food processor once.
Heat 1 or 2 tsp of oil in a small tawa and fry the tofu cubes till light brown. keep aside.
Then heat oil in a pan add cumin seeds when it start to splutter add onion and fry till light brown. Then add ginger-garlic paste and keep it for 5 min then add  turmeric powder, chilli powder, coriander powder, cumin powder, garam masala,tomato puree, little salt fry it till the raw smell goes off.
Add ground spinach leaves and cook for 5 min and then add tofu cubes and cook it in low flame till it becomes thick consistency.
Before switch off the heat adjust the salt as per the  taste.
Serve with rice or roti.
