Brinjal - 6-7 small
Onion - 1 big
Tomato - 1 medium
Turmeric powder - 1/2 tsp
Chilly powder - 2 tsp
Coriander powder - 3 tsp
Tamarind paste - 1 tsp
Ginger - 1 small inch
Garlic - 2 pods
Curry leaves - 4-5
Methi seeds - 1/4 tsp
Vadakam - little (optional)
Hing - 1/2 tsp
Coconut milk - 1/4 cup
Method:
Step 1:
Cut onion into 2 pieces and take half portion and grind it with garlic and ginger into smooth paste and chop the remaining half onion and keep aside.
Mix tamarind paste in a warm water and keep aside. Grind tomato seperately into smooth paste and keep aside.
Step 2 :
In a large bowl add tamarind water, chilly powder,coriander powder,turmeric powder, tomato paste,onion paste ,salt and mix well.
Step 3 :
Heat oil in a pan add curry leaves,methi seeds,hing, vadakam and fry well.
Now add chopped onions and fry till onion turns pinkish color and then add brinjals and fry well for 10 min.
Then add the step 2 mixture and cook it in low flame till raw smell goes off.
Finally add coconut milk and turn off heat.
Serve with hot rice.
