Oatmeal Pancake (Yummy & Heart healthy!)



Oatmeal is very heart healthy with lot of fiber and lowers cholesterol, blood pressure. I love pancakes. Oatmeal pancakes is one of my favorite breakfast esp on Sundays. A perfect pancake to me should come out puffy, spongy, should have right level of sweet, invitingly colorful and should be a feast for nostrils. Here is what I enjoyed yesterday for breakfast:




Ingredients:


1. Rolled or Old style or Irish Oats 1 cup

2. 100% whole wheat multi-purpose flour 1/2 cup

3. Egg white (or whole egg beat if you prefer) 1/2 cup

4. Baking powder 1 tsp

5. Agave for sweet 1 tblsp (or sugar if you prefer)

6. Blueberries 1/2 cup

7. Fat-free milk (1/2 cup)

8. 100% Maple syrup (cheap HFCS high-fructose corn syrup mix is no good for both health and taste)

Add oats to the milk and soak it for 3-4 hours or overnight in refrigerator. Add egg white, wheat flour, baking powder, agave (or sugar) and blend in processor / coffee grinder. Bring a non-stick pan to medium heat and pour 5 to 7 spoons of the mix (non-stick greasing stuff or oil is not really needed for pancakes). Turn it over in 1 to 2 minutes and take out once it becomes puffy and golden color.

Enjoy with 100% maple syrup and a small cube of butter if you wish. Perfect breakfast with coffee or fruit shake. What else... indulge into the bliss!

Green Beans Stir Fry




Green beans are the excellent source of Vitamin c, vitamin k, and manganese.
They are also good source of vitamin A, magnesium, calcium, omega-3 fatty acids and niacin.
The major health benefit of common beans is their ability to lower cholesterol due to their rich source of fiber.
The presence of vitamin k in green beans makes them very good for maintaing the health of bones.
The high amount of fiber present in green beans helps in lowering high blood pressure.
Regular consumption of green beans has been associated with strengthening of the immune system.
Beans is used to make curries, rice dishes, gravies and many more. This is one of the favorite dish of my hubby.

Here goes my recipes...

Ingredients:

Baby green beans - 2 cup
Onion - 1 medium
Garlic - 2
White sesame seeds - 1 tblsp
Chilly powder - 2 tsp
Garam masala - 1 tsp
Cumin seeds - 1 tsp
For garnishing Sesame seeds - 1 tsp

Method:
Boil the green beans with salt until it become soft.
Dry roast the sesame seeds and grind it with salt to a fine powder and keep aside.
Heat oil add cumin seeds, onion, garlic and fry till it turns light brown.
Then add cooked beans, chilly powder, garam masala cook on high flame for 5 min.
Then when it become dry turn off the heat.
Serve with rice or chapati.

Cabbage Soup



Ingredients:

Cabbage - 1 small
Onion - 1 medium
Milk - 3 tblspn
Black pepper powder as per taste
Salt to taste
Oil

Method:

Wash and chop the cabbage. Chop the onion and keep aside.
Heat a pressure cooker with oil and add onion and fry till they are pink. Then add cabbage and fry for 5 min.
Then add 1 cup of water and pressure cook for 2 whistle.
Once cooled sieve and grind it to smooth paste and add water as per consistency.
Then cook without lid add milk, salt and pepper to taste. Bring to boil till you get thickness.
Serve hot.

Zucchini And Herb Omelette




Zucchini helps cure asthma, as it contains vitamin C, which is a powerful antioxidants and has inflammatory properties. Zucchini have high water content high nutritious value and contain a very low amount of calories, so they make the perfect snack item for people on diet. Zucchini contains vitamin C and lutein, both of which are know to be good for the eyes.
The vegetable proves to be a good source of magnesium and phosphorous, the nutrients essential for building and maintaining healthy bones.
Zucchini is rich in vitamin c, another powerful antioxidants that can provide against cardiovascular disease.
Zucchini herb omelette is one of the tasty dish and good for health. This is very easy to make and healthy too. So here goes my recipe.......

Ingredients:

Egg Whites - 2 eggs
Zucchini - 1 grated
Green onions - 2 finely sliced
Parsley or Cilantro - 2 tblspn finely chopped
Chives - 2 tblspn
Freshly ground black pepper - 1 tsp
Sea salt to taste

Method:

Combine all the ingredients, mix well and pour into omelette pan brushed with olive oil.
Cook until mixture is firm, then turn omelette over and cook the other side.
Serve with any salad.
